A very simple recipe ready in minutes
Pre-heat your oven to 200 Degrees Celsius
Method
- In an oven-proof pan, sautè some finely chopped onions, garlic and ginger until aromatic.
- Toss in your chickpeas. (Can be tinned).
- Add in one tablespoon of tomato paste and cook it off. Next, add in one diced tomato and mix everything together until well combined. Add a pinch of salt, cumin powder, thyme leaves and black pepper.
- Crack an egg on top (or depending on your portion size). Put the pan in the oven and wait for the egg to cook.
- Once the egg is cooked, carefully remove the pan from the oven. Garnish with freshly chopped herbs. Serve hot.
