As we all know by now, Ethiopia is the birthplace of coffee and is also one of the few places where you still find coffee growing in the wild. Ethiopia is known for not only producing Arabica beans but also for producing some of the best high quality beans in the world.
What makes Ethiopian coffee so special:
- The high altitudes and the volcanic soil- Makes it the perfect place to grow high quality beans
- The climate – The interplay between rainfall and cool-tropical temperature
- The surrounding – Coffee picks up its taste from its surroundings
- The harvesting and processing – Ethiopian coffee is organic by default. Even though there is no certification, the use of chemical and artificial fertilizers is rarely used.
Given the different regions in which Ethiopian coffee is grown in, and the different flavours the coffee acquires depending on its origin and surrounding, most Ethiopian beans are known for their winey, fruity taste with some extra floral notes. The body of the coffee is not very strong and the acidity is mild and pleasant. The aftertaste goes towards chocolatey notes.
Over the year at Tomoca, we have curated 3 signature drinks; The Ethiopian Macchiato, Tomoca Sprice and Tomoca Cravate, which have become house favourites. Now you may be asking yourself what is so special about these 3, well wait no more!
Ethiopian Macchiato – Macchiato is the most favorable signature drink at Tomoca. Skimmed milk at the bottom, foamed milk at the top and some lovely Tomoca Coffee in between.
What makes it so tasty is how the barista finds the perfect balance between the Tomoca coffee and the milk. Once you get to taste the macchiato at Tomoca, you might have a hard time drinking anything else!
Cravate – Cravate is for those who have a tough time drinking a dark, heavy cup of Tomoca Coffee.
As we know, Tomoca Coffee is famous for its dark roasted coffee which tends to be a bit too strong for some people. Caravate is therefore mixed with some water, sugar and Tomoca Coffee on top, making it less strong.
However, even though it is mixed with water it can still be a chock for a non-regular coffee consumer. Our Baristas will make it according to how strong you like it.
Sprice – Sprice is the “Dancing Drink”, it is basically sugar, tea and a shot of Tomoca Coffee.
For many of us, this may sound absurd since we are used to people drinking either coffee or tea. But this is actually a favorite amongst many people. You will get the best of both worlds, the sweetness from the tea and the rich flavored coffee perfectly mixed together.
It is also a sight for the eye, as the sweetened tea lays at the bottom and the dark coffee on top, making soft waves, creating a unique (and Instagramable) dancing effect.
