To celebrate, here is a special try it at home recipe – Cheesy Raka Cheese Balls – a favourite appetiser of cheesy-goodness inside a crunchy, crispy coating.

Cheesy Raka Cheese Balls Recipe

Ingredients

  • 4 Medium Potatoes, Boiled and Peeled (250g)
  • 50g Sweet Corn
  • 50g RAKA Cheddar Cheese
  • 50g RAKA Mozzarella Cheese
  • A handful frozen Coriander Leaves
  • 2 tsp Coriander Seeds, crushed
  • Salt to taste
  • 3/4 tsp Red Chilli, crushed
  • 1/4 tsp Black Pepper, crushed
  • 1/2 tsp dried Oregano
  • 1-1/2 tbsp Cornflour
  • Breadcrumbs as needed
  • Oil for frying

 

FOR BATTER:

  • 2 tbsp cornflour
  • 2 tbsp all purpose flour
  • 1/3 cup water (more or less)

 

Method

Step 1:

  • Mash potatoes with a fork. Once mashed add seasonings salt, black pepper, red chilli, RAKA Cheddar Cheese, sweet corn, coriander seeds, coriander leaves, dried oregano & cornflour. Mix well.
  • Take one tbsp of potato mixture and shape into a ball then flatten it. In the centre add some grated RAKA Mozzarella and close it into a ball. Repeat the process with the rest of the potato mixture.

Step 2:

Prepare batter:

  • In a small bowl add cornflour, all purpose flour and gradually add water. Mix everything together and with no lumps.

Step 3:

Assemble:

  • Dip each potato ball first in the batter and then roll into the breadcrumbs making sure it’s coated well.
  • Place the balls in the freezer for at least one hour before frying.

Step 4:

  • Heat oil, once the oil is hot slide the cheese balls gently & turn till golden.

 

Serve warm with Sweet Chilli Sauce or Ketchup
