Making pasta seems like a tasking job but it is a fun and easy recipe that you can make in your own kitchen. You have the option of the store bought version but once in a while you should make it from scratch. It is a two part process that does not take up too much of your time. If you do not have a mixer you can do the mixing by hand.

Cook Time: 5 minutes
Ingredients:
• 1 ½ cups Semolina Pasta Flour
• 1 ½ cups all-purpose flour
• 4 eggs
• 4 tablespoons Olive Oil
• 4 tablespoons Water
• 1 teaspoon salt
Method:
1. If you are using your hands combine semolina flour, all-purpose flour, slightly beaten eggs, water, oil and salt. Mix the ingredients to make stiff dough. Knead for around 10 minutes by hand.
2. If you are using a stand mixer, combine semolina flour, all-purpose flour, slightly beaten eggs, water, salt and oil in a standard mixer bowl. Knead the dough on medium speed with a dough hook.
3. If the dough is too sticky, sprinkle Semolina flour until it comes together and if the pasta dough is too dry, sprinkle water until you get the right consistency.
4. Using the fleshy part of your palms, knead the pasta dough until it is smooth and silky. Flatten the pasta into a disk and wrap with plastic wrap. Refrigerate for 10 minutes.
5. Remove the dough from the fridge and cut the dough in half and shape into a ball. Begin rolling out the dough with a rolling pin to achieve an oval shape. Continue rolling the dough until you see the outline of your hand through it. Fold the ends of the dough into the middle, and then fold the folded ends in again towards the middle again. Do that one more time.
6. Trim the edges of the folded pasta and then begin cutting thin strips. Weave your knife through the folds of the pasta, shaking the knife to loosen the pasta threads.
7. Boil the pasta in heavily salted water for around 4 minutes until al-dente.
8. Serve with grated Parmesan, salt, pepper and more drizzles of olive oil.
