Chef Delight Famous Tugulu Roll By Chef Collins Khausi

Ingredients:
- 80gms Sushi Vinegard Rice
- Nori sheet(1PC)
- 30gm fresh crabmeat
- 60gm King Prawns
- 15ml Tempura Butter
- Sushi Mat
- 5gms Sugar snap
- 8gms Mango
- 10gms Avocado
- Spring Onions as garnish
- 10 ml Soysauce
- 5gms Wasabi paste
- 5gms Pickled ginger
- 10ml Cooking oil.
Method Of Preparation
- In a pan add cooking oil and bring to heat
- Coat prawns with tempura butter and deep fry till golden brown
- Place nori sheet on the mat.
- Cover the top side with 80gm vinegard rice.
- Flip and add fresh crab, mango, sugar snaps, and prawn tempura
- Close the roll and top it with the avocado wrap.
- Cut into six pieces and serve
Serve with pickled ginger, wasabi paste and soy sauce as a side

Meet Chef Collins Khausi
Chef Collins Khausi’s culinary interest came from his mother who loved baking in their rural home kitchen back in Western Kenya. Collins started his journey as a chef in 2008 at Tokyo Japanese restaurant as an apprentice, where he was taught the basics of becoming a top Sushi Chef by the owner of the restaurant Mr. Shin. Upon finishing his apprenticeship, he moved to Onami Sushi Bar and Grill located at Westgate Mall as an assistant Sushi Chef. With his passion, dedication and zeal to learn more, Collins ventured and took his skills to the Kenyan coastal town of Malindi coast where he worked at Casino Malindi and later at Tamarind Mombasa. Collins’s hunger to get better and harness more at his craft led him to work at various top destinations in Kenya like the Tribe Hotel, Tamarind Tree Hotel, and Mawimbi Restaurant to name a few more.
Chef Collins is now a Chef de Partie at Hero restaurant at the Trademark Hotel where he specializes in Nikkei Cuisine. He is a father to three, a passionate worker and an inspiration to many who look to him.
